Gingerbread Granola

Gingerbread granola adds a tasty crunch to yogurt, fruit and more! A personal recipe from author, Ann Tarpley Francesco, it also makes a great stocking stuffer or gift!

INGREDIENTS:
  • 3 cups rolled organic oats 
  • 1/2 cup chopped pecans (more if you like!)
  • 1/2 cup combination of pumpkin seeds and sunflower seeds (raw)
  • 3 T organic light brown sugar
  • ½ tsp Himalayan salt
  • 1-1/2 T Gingerbread Spice Mix
  • 1/4 cup molasses (unsulphured, not blackstrap)
  • 1/4 cup coconut oil (refined)
  • 1 T organic honey

DIRECTIONS:
  1. Heat oven to 300 degrees.
  2. Combine oats, pecans, seeds, salt, spice mix, and brown sugar in a large bowl.
  3. Combine honey, oil, and molasses in a small bowl. Heat slightly in the microwave to melt coconut oil and thin out molasses and honey.
  4. Pour over oat mixture and stir.
  5. Spread mixture in a thin layer on baking sheet.
  6. Bake for 15 minutes, then stir. Continue baking for 15 more minutes until golden brown and crunchy.
  7. Cool for 20 minutes on a wire rack. Stir occasionally while cooling. Use a flat knife to lift the granola from the pan and break it up more, if necessary.

Its rich and light flavor contains a number of essential minerals such as calcium, magnesium, copper, manganese, potassium,  iron, phosphorous, chromium, cobalt and sodium. It is a good source of energy and carbohydrates and contains sugars various vitamins such as niacin (vitamin B-3), vitamin B-6, thiamine and riboflavin.
